Why Food Hygiene Training
The law requires proprietors of food businesses to ensure that food Handlers engaged in the food business are trained, instructed and supervised in issues of Food Hygiene that are appropriate to their work.

Level 2 Food Hygiene Course
The Level 2 Award in Food Safety in Catering provides the necessary training to fulfil the basic requirements for Food Handlers. It can also be used as a stepping stone towards the Intermediate Food Hygiene qualification, which is aimed at supervisors and management in food provision.
CIEH (Chartered Institute of Environmental Health) accredited Level 2 in Catering gives first tier workers an appreciation of the fundamentals of good food hygiene practice.
Course Content
Successful completion of the training programme and assessment will enable candidates to understand:
- The terminology used in food safety.
- The laws that apply to food businesses and food handlers.
- The concepts of food hazards and how the risk of food poisoning can be contained.
- How to take and record product and equipment temperatures.
- The minimisation of bacterial multiplication through storage temperature.
- The importance of high temperatures in the supply of safe food.
- How food handlers can pose a risk to food safety.
- The importance of appropriate storage conditions for different types of food.
- The importance of cleaning in food premises.
- The need for high standards in maintenance of premises and equipment to promote good hygiene in food premises.
Length of Course
Minimum course time is 6 hours (9am to 4.30) - times can be extended according to the groups' needs.
Accreditation Format
- Assessment - 30 multiple choice question paper.
- Pass mark - 20
Oral assessment papers are available for candidates who have difficulties reading - this can be arranged prior to course. Assessment can also be taken in a variety of languages. Course books are available in various languages and can be ordered prior to course if required.
